sundae cupcakes


it may seem like i bake for the circus from time to time.



there are many circus elements in my world.
and i wouldn't have it any other way.

chocolate cupcakes
from martha.
1 1/4 cup unsweetened cocoa powder
2 1/2 cups all-purpose flour
2 1/2 cups sugar
2 1/2 teaspoons baking soda
1 1/4 teaspoon baking powder
1 1/4 teaspoon salt
2 large eggs, plus 1 large egg yolk
1 1/4 cup warm water
1 1/4 cup milk
1/2 cup plus 2 tablespoons vegetable oil
1 1/4 teaspoons pure vanilla extract

preheat oven to 350 degrees. line muffin tins. sift together cocoa, flour, sugar, baking soda, baking powder, and salt. add the eggs, warm water, buttermilk, oil, and vanilla; mix batter until smooth, about 3 minutes.

fill tins. bake, rotating the pans halfway through, about 15 minutes (for minis).

buttercream
1/2c butter
1/2c shortening
4c powdered sugar
1 tbs vanilla extract
milk

mix the fats. add the sugar. then vanilla. add milk until desired consistency. beat until fluffy.

ganache
16 oz dark chocolate
1 cup heavy cream

finely chop the chocolate and place in a heat proof bowl. heat cream until bubbles form around the edges. slowly pour the cream over the chocolate. let sit for 5 minutes. stir to combine.

assembly.
after making all the components, hollow out the cupcakes. i use a frosting tip. but a vegetable peeler works great. and i hear they make actual cupcake corers.
fill the cupcakes with ganache.
top with buttercream.
drizzle ganache over each cake. add sprinkles.
and a cherry!

tiny little hot fudge sundaes.
