apricot blackberry galette

visiting the big city and my little brother.
cleaning out his cupboards. and apartment.
baking. one last time in this kitchen.
so many memories in this batch.

this recipe was a combination of whatever i could find and amazing summer produce.
i would usually use sour cream. but only found vanilla yogurt. and i don't want to think of how old the flour may have been...

dough
1 1/4 cups all-purpose flour
1/4 teaspoon salt
8 tablespoons cold unsalted butter
1/4 cup yogurt
1/4 cup ice water

combine the flour and salt. cut in butter. stir together water and yogurt. slowly add to flour mixture. form into a ball. wrap and chill for at least 30 minutes.

preheat the oven to 425f.

filling
6-8 apricots
1 cup of blackberries
spices (i was looking for ginger. but found chinese five spice.)
honey (i drizzled over the tops. but would recommend stirring it in.)
sugar (about a 1/4 cup)

slice the apricots. toss with the honey, spices and sugar. fold in blackberries. (i added cornstarch. don't do that. unless you decide to use frozen fruit. it leaves clumps of whiteness.)

roll the dough out to about 1/8 inch. (i rolled it into one giant circle. and then cut out smaller circles. it would be much easier to divide the dough first. about eight small pieces. and then roll out little circles. just sayin.)

place about a half cup of fruit mixture on each circle of dough. fold up the edges. brush with egg or milk. and sprinkle with sugar. place on a baking sheet (covered with parchment).
bake for 20-30 minutes or until golden!
