green tomato salsa (the official end of gardening season)



october has been beautiful.
with so much late autumn sun that i thought my tomatoes would surely ripen!




well.
according to those who know, tomatoes need to have a minimum of 55f overnight to fully ripen. we haven't exactly been experiencing that.

so! i pulled in all my tomatoes. and what was left of my beets and all of three carrots. have i mentioned that my garden gnome did a lousy job protecting the crops from predators? must work on that next spring...



green tomato salsa
10 cups chopped green tomatoes
2 medium onions
4 serrano peppers
2 jalapeno peppers
6 cloves of garlic
1 cup of lime juice
1/2 cup apple cider vinegar
2 tbs fresh cilantro (or throw in dried corriander because you can't read directions)
1/2 tbs cumin
1 tbs oregano
salt, pepper
1 tsp sugar

chop everything that needs chopping (to your desired salsa size).
combine all ingredients in a large pot. bring to a boil and then simmer for 30-40 minutes.
process for 15 minutes (for pint or smaller jars).
