goat cheese fig tarts


i love fresh figs. beautiful. sweet. and the most amazing texture. the perfect pairing for these cheesecake like tarts made with sharp goat cheese and then drizzled with a balsamic honey reduction.

goat cheese filling
10 oz goat cheese (room temp)
2 eggs (slightly beaten)
1/4 cup heavy cream
salt, pepper

10-12 fresh black mission figs

preheat oven to 400f. whisk the cheese, eggs, and cream together. season. and pour into prepared tart shells.  arrange either sliced or quartered figs on the top of your tart and bake for 25-30 minutes or until the edges are puffy and golden. 

-i think i used a standard pie crust recipe for this tart. any tart crust will do! and i did prebake the shells.
-i used many tiny tart tins but one large tin will do.just adjust the baking time until the tart is set in the middle.
-the final touch was balsamic reduced with honey which made the most delightful syrupy glaze.
