strawberry rhubarb pie
my sister and i made a scrumptious pie for a pre mother's day family dinner. really, she made the pie but let me stir, roll, and assemble. have i mentioned my amazing sister and her skill in the kitchen? i can only dream of being that organized. that knowledgeable. that talented.
strawberry rhubarb pie
1 double pie crust recipe
4 cups rhubarb (frozen or fresh, chopped)
2 cups strawberries (frozen or fresh)
1/4 cup cornstarch
1 cup sugar
1 tsp cardamom
egg wash, sugar for dusting.
you may change your recipe and ratios as we simply made this up as we went along.
preheat the oven to 375.
roll out one disc of dough. place in a large pie plate. chill if needed.
bring 2 cups of rhubarb and sugar to a boil, cook down. stir in the remaining fruit, then add the cornstarch and any spices you like.
cool slightly. pour into prepared plate.
roll out your other dough disc and decorate the top! brush with egg, sprinkle with sugar. place on a baking tray (to prevent drips in your oven) and bake for 40-50 minutes. watch the edges as they may need to be covered part way through. cool completely and serve with ice cream!
