cookies


cookies. ginger for me. and chocolate for t.


ginger cookies
(adapted from epicurious)

2 cups flour
3 teaspoons ground ginger
2 teaspoons baking soda
1 teaspoon cinnamon
1 teaspoon cloves
3/4 teaspoon salt
1 cup dark brown sugar
1/2 cup shortening, room temperature
1/4 cup butter, room temp
1 large egg
1/4 cup molasses
3 tablespoons fresh ginger, grated finely


mix your dry ingredients together and set aside.
cream the butter, shortening and brown sugar.  add the eggs and molasses. stir in the fresh ginger. and then add the dry ingredients just until blended.

cover and refrigerate for an hour.

preheat the oven to 350f.
roll the dough into 1-1 1/2 inch balls, coat with sugar and place on a baking sheet (with a silpat or lightly greased). bake for about 12 minutes or until the tops have cracked. 
cool on a wire rack!

notes:
-add more spice! double the cloves and cinnamon. add at least another couple teaspoons of dried ginger.
-maybe a bit more flour here. they were terribly flat. but soft and chewy and lovely!

chocolate chocolate cookies
(adapted from martha stewart)

1 cup of flour
1/2 cup of dark cocoa powder
1/2 teaspoon baking soda
1/2 teaspoon salt
8 ounces dark chocolate (half chopped finely, half chopped into bite size chunks)
1/2 cup unsalted butter (in small pieces)
1 1/2 cups sugar
1 teaspoon vanilla

preheat the oven to 325f.
whisk together flour, cocoa powder, baking soda, and salt; set aside.
melt 4 ounces finely chopped chocolate with the butter in a small heatproof bowl set over a pan of simmering water; let cool slightly.
stir eggs, sugar, and vanilla into the melted chocolate mixture. slowly stir in the dry ingredients.
let the chocolate goodness sit for a bit. it is very sticky to start but will become workable as it sets.
roll into 1 1/2 inch balls, coat with sugar and place on a greased baking sheet.
bake for 15 minutes. the tops will be cracked but the cookies will be very soft. cool on the baking sheet for a few minutes and then transfer to wire racks.

notes:
-i might use half shortening and a bit more flour. the cookies were amazing but i think a bit more poof might be nice!
