cherry chocolate ice cream and chocolate cookies

many good things come from vermont. this was inspired by two of them.




cherry chocolate ice cream

2 cups heavy cream
2 cups whole milk
2 egg yolks
1/2 cup sugar
2 tbs vanilla

2 heaping cups of chopped cherries
4 oz of grated or chunked dark chocolate

combine cream and milk in a medium saucepan and bring just to a boil over medium heat. reduce to low.
beat the yolks, sugar and vanilla in a small bowl until light and smooth. add 4 tbs of the hot cream mixture to the egg mix and stir until combined. gradually add egg mix to the cream mix stirring constantly. cook over low heat until it thickens slightly. about 3-4 minutes.
place in a bowl and allow to cool entirely.
follow the directions on your ice cream maker.
