rhubarb jam

the end of the rhubarb season.  time for freezing and canning. two batches of jam so far- strawberry rhubarb and rhubarb ginger.



strawberry rhubarb jam

2 cups of smashed strawberries
2 cups of chopped rhubarb
1 cup of apple juice
6 cups of sugar
1 packet of pectin

so i found this recipe to be disturbing. six cups of sugar?! my teeth were hurting just thinking about it. but my mother promises that this is a standard ratio.


rhubarb ginger
4 cups of chopped rhubarb
1 cup of sugar
zest from 1 lemon
4 tbs of candied ginger, chopped


this recipe was more my style. tart and tangy.


i will do some research on ratios. and pectin. jam making in general. and get back to you.
